Information about music copyright

I’m an amateur guitar/lute player and I really like some of the soundtracks. I was wondering what use of the music would be legal and allowed by the creators. More specifically – would it be okay if I wanted to play music from Conquests of the Longbow on an instrument and post a recording on youtube? Would it be okay if I made a sheet music arrangement and posted it online?
